Protein skimming, also known as foam fractionation, is accomplished by using a protein skimmer. The purpose of a protein skimmer is to improve the quality of the water by removing Dissolved Organic Compounds (DOC)from aquarium water. The overall design and functionality of the different types of protein skimmers is pretty much the same.

The skimmer is constructed in a tube or tower design and a collection cup at the top. In some cases it can include a water return tube. The way they work is pretty simple. The skimmer injects a large number of very fine air bubbles into the tube by using air stones or a high pressue water pump and air valve. The rising air bubles allows the DOCs to attach and hitch a ride up through the tube to the surface. These are then captured in the collection cup and thrown out.
